Broccoli Soup 4 servings

Sicilian Bruscetta (Grilled Bread) Sicily is an island off the coast of Italy and close to the Northern African country of Tunisia. Sicilian culture and language contain Arabic, Greek and Italian influences. The word often associated most with Sicilians, “Mafia” is actually an Arabic word for refuge when the Sicilians hid in the mountains from the Arab invaders. The word Bruscetta comes from the Italian verb brusciari which means to burn. They call it this because the bread is toasted or grilled. In Italian, the letter c is followed by h to make it hard before an e or i. Therefore it is pronounced brusketta with a hard k.
Ingredients:
1 clove garlic, peeled and crushed
Olive Oil
Oregano to taste
Crushed tomatoes, fresh or canned
Shredded Mozzarella Cheese or grated Parmesan
Day old French or Italian bread sliced
Toast the bread. Brush the bread with olive oil and place a few pieces of garlic on the bread (you may use garlic powder). Top with tomato sauce or diced fresh tomatoes. Sprinkle with cheese and bake until cheese is melted or beginning to brown in a 350 degree oven. Enjoy…
